- Systematic Approach to Bread
Learn the perfect details of mixing, fermenting, shaping, baking bread, practice using local flour and how we can adjust the recipes in Indonesia’s environment.
Hands on : Shaping the bread, various mixing techniques, utilizing different preferment, and more.
- Baking Sourdough, Levain and Wild Yeast
Build on essential skills in testing various starters and how fermentation techniques can affect flavour and appearance in hands-on environment.
Hands on : Sourdough culture, Sourdough with different flours, Ciabatta, etc
